Instructions
- Prepare all the required ingredients.
- Rinse spinach and remove any large stems. Slice onion into half rings. Chop garlic clove.
- Warm pan on medium heat and slightly toast pine nuts until brown (do not use any oil). Remove pine nuts and let them cool on the side.
- Add some oil to the pan where the pine nuts were toasted. Bring it to a medium heat. Add onion and garlic. Sauté for a couple of minutes until soft and golden.
- Add pine nuts and raisins and mix everything together. Sauté for half a minute.
- Add spinach, cover with a lid and reduce heat to low-medium. Sauté for a couple more minutes until spinach becomes softer. Make sure not to overcook to wilted spinach. Add a dash of salt and pepper.
- Spinach salad is ready to be served! It is great warm as well as chilled.
