Looking to surprise your family and friends with a cool and healthy treat this 4th of July? These mini tarts are a perfect finger food. They’re wonderfully delicious, very nutritious and absolutely guilt-free. They’re flourless, naturally sweetened and even have superfoods in the ingredient list!

Ingredients
- Tart Dough
- 1 1/2 cup Oatmeal (flour or finely ground in a food processor)
- 3-4 tbsp Homemade Cashew Butter
- 3 tbsp Water
- 2 tbsp Honey
- Cottage Cheese Filling
- 1 cup Cottage Cheese
- 1 tbsp Homemade Cashew Butter
- 1 Egg
- 2 tbsp Honey
- 1 tbsp Organic Coconut Flour
- Goji Berries (for decoration)

Instructions
Tart Dough
- Prepare all the required ingredients.
- In a bowl mix oatmeal flour, cashew butter, honey and water. Make a dough - it shouldn't be wet, neither should it be crumbly.
- Use a cup/muffin tray for baking the mini tarts. Grease the tray with coconut oil. Place a small piece of dough in each cup and shape it into a tart.
- Bake mini tarts for about 10 min. at 350F.
Cottage Cheese Filling
- Meanwhile, mix cottage cheese, egg, honey, cashew butter, and coconut flour in a separate bowl.
- Remove the tarts from the oven. Fill each tart with the cottage cheese mixture. Sprinkle some Goji berries on top of each tart.
- Bake mini tarts for about 25 min. at 350F.
- Remove the mini tarts from the oven and let them cool down before transferring them to a plate. Bon Nuppetie!
