Simple Homemade Bread with Raisins and Sunflower Seeds

This all natural homemade bread has a very soft texture and a crispy crust. Raisins add some sweetness and sunflower seeds give an interesting bitter touch. The magic aroma of this fresh bread will fill your entire home!

Ingredients
- 3 cups All Purpose Flour
- 1/4 tspn Yeast (Instant)
- 1 1/4 tspn Salt
- 1 1/2 cup Water (high quality)
- 1 cup Dark Raisins
- 1 cup Raw Sunflower Seeds (Kernels)

Instructions
- Prepare all the required ingredients.
- Warm a pan on a medium heat. Add sunflower seeds and toast them for a couple of minutes until they are evenly brown. Set aside 1-2 tspn for a bread topping.
- Place all dry ingredients in a large bowl (flour, yeast, salt, raisins, sunflower seeds). Mix it all together.
- Add water and quickly mix it in. It should take you about 2 min. DO NOT KNEAD the dough!
- Cover the bowl with a cotton kitchen towel and leave it in a dark place at a room temperature for about 12 hours (overnight).
- After 12 hours the dough should rise. Remove the towel and place it on a counter top. Sprinkle it with some flour. Transfer the dough to the towel and sprinkle it with a little bit of flour as well. Cover the dough with a towel and leave to rest for another 30 min.
- Meanwhile, set your oven at 525 F (at least 500 F). Place a large casserole dish in the oven - we need it to be extremely hot for the next step.
- Quickly transfer the dough to the casserole dish, sprinkle the rest of sunflower seeds on top, cover with a lid and place it in the oven for 17 to 20 min. Check on the bread after 15 min to make sure you don't need to remove it earlier.
- Remove the lid and bake the bread for another 3-5 min. If you want more color, bake for 2-3 min and then broil for 2-3 min.
- Your bread is ready! Let it cool down. For a crispier crust, leave it on a plate. For a softer crust, cover it with a clean kitchen towel.
