- Honey Roasted Almonds
- 1 lbs Raw Almonds
- 3 tbsp Honey
- 1 1/2 cup Brown Sugar
- 1 tsp Ground Cinnamon
- 1 stick Cinnamon Stick
- 4 buds Clove
- 4 pieces Peppercorn
- Salt
- Water
- Candied Roasted Cashews
- 1 lbs Raw Cashews
- 2 Egg Whites
- 1 1/2 cups Brown Sugar
- 2 tsp Ground Cinnamon
- Salt

Instructions
- Prepare all the required ingredients.
Honey Roasted Almonds
- Warm pan on a medium heat. Add almonds and toast for 4-5 min until slightly browned. They should have a nice roasted smell.
- Add about 3-4 tbsp of water and honey. Quickly mix in the almonds, so that all the nuts are covered. Add cloves, peppercorn, and a cinnamon stick. Cook for another 5 min or until almonds absorb all the liquid.
- Meanwhile mix sugar, ground cinnamon and a dash of salt in a large bowl. Prepare large baking tray with a sheet of baking paper or aluminum foil on top.
- Transfer almonds to the bowl and quickly mix them with the sugar blend until all nuts are evenly covered. If the nuts are too hot, do it with a spoon or spatula. The nuts will be very sticky.
- Spread almonds evenly on a baking tray. Bake for about 5 min. Remove from the oven and transfer to a clean tray and let them cool for 30 min. Shake the nuts a couple of times during this time so they don't stick to each other.
Candied Roasted Cashews
- Warm pan on a medium heat. Add cashews and toast for 4-5 min until slightly browned. They should have a nice roasted smell.
- Meanwhile add egg whites to a bowl and beat them until white and thickened. In another bowl mix sugar, ground cinnamon, and a dash of salt. Prepare large baking tray with a sheet of baking paper or aluminum foil on top.
- Add cashews to the egg whites and mix in so that all the nuts are covered. This will be a sticky base for the sugar mix.
- Mix cashews with the sugar blend until all nuts are evenly covered.
- Spread cashews evenly on baking tray. Bake for about 5 - 8 min. Remove from the oven and transfer to a clean tray and let them cool for 30 min. Shake the nuts a couple of times during this time so they don't stick to each other.
