Homemade Dark Chocolate with no preservatives, just All Natural!

Ingredients
- Dark Chocolate base
- 200 g Cacao Powder (can be substituted by unsweetened Cocoa powder)
- 130 g Cacao Butter
- 3 tbsp Honey (or powdered sugar)
- Salted Dark Chocolate
- Raw Almonds
- Salt
- Spicy Dark Chocolate
- Raw Cashews
- Ground Chili Pepper
- Sweet Dark Chocolate
- Hazelnuts
- Diced Dates
- Vanilla Extract

Instructions
- Prepare all the required ingredients.
- Toast the nuts on a dry pan at medium heat, if needed. Crush them in a food processor until small but not powdered/crumbled.
- Prepare a chocolate tray. Place the dry ingredients (nuts, dried fruits and spices) in the tray.
- Add water to a small pot and bring it to a boil. Meanwhile, measure the cacao powder and cacao butter you will need to make a desired amount of bars. When water is hot enough, place bowl with cacao butter over the pot and let it melt.
- When cacao butter is melted, add cacao powder and start mixing it all together until you see a smooth chocolate mass.
- YOU CAN SKIP THIS STEP. For a shiny texture and a real chocolate look use this technique. Let the chocolate reach 120 F. Remove from the stove and let it cool down to 80 F. Then put it back over the pot with hot water and let it reach 90 F.
- Add honey to the chocolate. Taste to see if needs more. Now the chocolate is ready to be placed in a chocolate tray! Use spatula to make it as flat and even as possible. Leave outside for about 2 - 3 hr. You can also put it in a fridge.
- Use a holiday foil or festive little plastic bags to wrap your gift chocolates! Enjoy the happy moment of giving!
