Instructions
- Prepare all the required ingredients.
- Cut onion, celery, garlic and tomato into chunks. Peel the pumpkin, remove the seeds and cut in large pieces.
- Warm olive oil in a large pot on medium heat. Add onion, garlic and celery and saute until soften.
- Add bacon and sun-dried tomatoes. Saute for another 5 min. Then add chopped tomato.
- Add pumpkin to the pot and pour in about 2-3 glasses of boiling water. The water should barely cover the pumpkin. Let everything simmer for about 20 min, until the pumpkin is very soft.
- Meanwhile, roast some pumpkin seeds in a dry pan on low-medium heat.
- Use stick blender to puree the soup. Make sure no pieces are left! At this point add salt and pepper to your taste.
- Add some more water, if necessary (depending on the soup thickness you are looking for). Bring the soup to boiling and then let it rest for 10-15 min.
- When serving, top the soup with roasted pumpkin seeds and some parsley. You can also make salted croutons and they will make it even better! Bon Nuppetie!
