Hearty Italian Bean Soup with Sausage

Beans are known for their extraordinary health benefits. This soup with bean mix and bunch of veggies will provide you with numerous vitamins and minerals to boost your immune system after a long winter.
Rinse the beans and put them in a bowl with cold water so they are fully covered. Leave overnight.
Rinse beans one more time. Transfer them in a soup pot and add cold water (as much as needed for a soup). Add bay leaf and herbs (use a thread to tie rosemary, oregano and thyme together, leave a long tail for easy removal). Bring to boil, add salt, pepper and a little bit of crushed chili pepper and let the beans cook for about 40min or until softened.
Meanwhile prepare all the vegetables: chop onion, garlic, celery, red bell pepper, and carrot.
Heat a pan with olive oil. Add onion, garlic and celery and saute until tender, about 5-7min. Then add bell pepper and carrot and saute for another 5-6 min.
Meanwhile prepare the tomatoes: blanch them with boiling water and then remove the skin. Cut tomatoes in cubes.
Slice the sausages.
Remove the herbs from the soup. Transfer the vegetables and tomatoes to the pot and bring to boil.
Add sausages to the pan where the veggies were sauted and fry for 5 min or until slightly crispy. Transfer to the pot. Bring to boil, let cook for another 5 min, then turn off the heat and let the soup rest.
At this time you can chop cilantro and green onion. Add the greens to the pot and mix in the soup.
Serve with a cheese bread! This soup is even better the next day. Bon Nuppetie!
