Instructions
- Prepare all the required ingredients.
- Chop dates into smaller pieces. Also cut or break coconut slices into smaller pieces.
- Slightly toast oatmeal on a medium heat for about 4-5min. Separately toast almonds and pumpkin seeds until slightly browned.
- In a large bowl, mix oatmeal, almonds, pumpkin seeds, dates, coconut slices and chia seeds.
- In a sauce pan heat honey with coconut oil and a dash of salt until completely melted and well mixed. Do not boil! Add the honey mix to the oatmeal and mix in well.
- Use a deep baking tray covered with baking paper or aluminum foil. Transfer the oatmeal mix to the tray. Use your hands, spatula or a separate baking paper sheet to even the layer and press it down.
- Bake for about 10 min. at 350F. Remove from the oven and put in a fridge for 1 hr until completely cool and hard.
- Cut into serving size bars - be gentle, so the bars don't break. You can warp each bar in plastic wrap and store them in a fridge. Bon Nuppetie!
