These Chocolate Chip Cookies are a healthy variation of a traditional recipe. Coconut oil, oat and almond flour, dark chocolate and almonds not only mimic the flavor you know and love, but make these cookies even better than the traditional ones!

Ingredients
- 1 1/2 cup Oatmeal (dry old fashioned oats)
- 1 cup Almond Flour
- 1/2 cup Coconut Oil
- 1 Egg (large)
- 4 tbsp Brown Sugar
- 1/2 tsp Baking Powder
- 1/2 cup Silvered Almonds
- 1/2 cup Dark Chocolate Chips
- Ground Cinnamon
- Vanilla Extract
- Salt (pinch)

Instructions
- Prepare all the required ingredients.
- Crush the dry oats into oat flour in a food processor.
- In a bowl, mix together sugar, egg, coconut oil, and vanilla extract. Mix well.
- In a separate bowl, combine oat flour and almond flour, baking powder, salt (just a pinch) and cinnamon (to your liking).
- Combine the sugar and flour mixtures. Add chocolate chips and almonds. Mix everything together well.
- Place the dough in a fridge for 20-30 min.
- Use a baking tray covered with baking mat or baking paper. Scoop the dough, roll it into a ball and slightly press to form a cookie.
- Make sure to leave a lot of space between cookies! They will be 2-3 times bigger in diameter.
- Bake at 250F for about 8 min. or until golden. Hot cookies will be very soft, but after cooling down for at least 15 min. they will become harder and you will be able to transfer them to a plate. Bon Nuppetie!
