Peel the pumpkin and cut into chunks. Bake at 400F for about 20-30 min. or until soft.
At the same time bake the pie crusts for about 10 min. or until golden.
Meanwhile, slice Feta cheese and beat each egg with a tablespoon of herbs.
When the pumpkin is ready, remove from the oven, let it cool down a little bit and then chop.
Start building the pie: first, cover the bottom of each crust with Feta cheese - you can use as much as you want. Top the Feta with pumpkin. The next layer is Mozzarella cheese. Sprinkle each pie with beaten egg and herbs and pumpkin seeds.
