- Coconut Flour Dusted Chicken
- 2-3 Chicken Breast
- 5-6 tbsp Organic Coconut Flour
- 3 tbsp Coconut Oil
- Salt
- Spicy Mango Sauce
- 2 Mango
- 3 tbsp Coconut Oil
- 2 tbsp Ginger Root (minced)
- 1 tbsp Garlic (minced)
- pinch Cayenne Pepper

Instructions
Spicy Mango Sauce
- Prepare all the required ingredients.
- Add coconut oil to a medium size pot and warm up on a medium heat. Meanwhile finely chop garlic and ginger. Peel the mango and cut in chunks.
- Add garlic, ginger and cayenne pepper to the pot. Cook until fragrant, about 1-2 min.
- Add mango to the pot and bring to boil. Lower the heat and let it simmer for about 10 min until the sauce is thick and smooth.
Coconut Flour Dusted Chicken
- Cut chicken fillets into 1-inch cubes. Place in a large bowl or ziplock bag.
- Add salt and coconut flour to the chicken. Mix well until all chicken is evenly covered.
- Heat coconut oil in a large pan. Once it is ready, place chicken in the pan and start frying it stirring frequently so the flour doesn't burn. Cook until skin is crispy.
- Reduce the heat. Add mango sauce and simmer chicken until fully cooked.
- Serve with plain rice. Enjoy!
