- 1 cup Parmesan
- 1 1/2 cup Raw Cashews
- 1 cup All Purpose Flour
- 2 Egg
- Coconut Oil
- Salt
- Pepper

Instructions
- Prepare all the required ingredients.
- Cut each chicken breast into thinner pieces - 2 or 3 depending on the thickness of the breasts.
- Slightly toast cashews on a dry pan. Transfer them to a food processor and crush into crumbs.
- Prepare three separate bowls: 1. place flour; 2. place eggs and slightly beat them with a fork; 3. mix parmesan, cashew crumbs, a little bit of salt, pepper and spices you like (we also added some powdered chili for spiciness).
- Prepare a baking tray covered with a foil. Grease the foil with a little bit of coconut oil.
- Place each chicken slice in flour first, make sure it is evenly covered. Then transfer to egg. After that, transfer to the cashew and parmesan mixture. You can try to stick as much crust mixture as possible to the chicken slice. Carefully transfer to the baking tray.
- When all the chicken is placed on the tray, pour just a tiny bit of coconut oil on top of each piece.
- Bake at 375F for 30 min. You can also broil it for a couple of minutes at the end to make sure it is crispy all around. Chicken will be nice and crispy on the outside, but very soft and juicy on the inside.
