- 5-6 Banana very ripe
- 4 Egg medium/large
- 4 cups Almond Flour
- 1/2 cup Coconut Oil softened
- 2 tbsp Baking Powder
- 1 tsp Soda
- 1-2 tbsp Plant-Based Milk
- Raisins handful
- Ground Cinnamon
- Natural Sliced Almonds for topping

- Prepare all the required ingredients and preheat the oven to 350F.
- Mash the bananas or puree them in a food processor.
- Add bananas, eggs, coconut oil, and milk to a large bowl and mix. Then add almond flour, baking powder, soda, and cinnamon, mix well. Lastly, add raisins and mix them in evenly
- Grease the bread pan with a little bit of coconut oil. Pour the mixture in the pan and sprinkle with almond flakes.
- Bake for approximately 50-60 min. or until a wooden stick comes out dry. Let the banana bread cool down and enjoy!
This is a healthy version of a classic traditional American dessert. Almond flour is naturally gluten-free and super nutritious. Ripe bananas and raisins are the only sweeteners in this pastry, so there is no added sugar. Although I do sprinkle it with raw honey when I serve it to my kids. It is much better to sprinkle the honey before serving than to bake it so it will retain its amazing qualities.
I let the bread cool off completely before removing it from the pan so as not to damage the bread. I also use this little trick. Once removed from the oven, I place the pan on a cold wet towel. Let me know if this works for you as well!
