Ingredients
- 2.5 cups All Purpose Flour
- 1 cup Brown Sugar
- 1 tsp Baking Powder
- 200 gr Raw Almonds (about 1/3 of 1lb bag)
- 50 gr Butter (about half stick, softened)
- 3 Egg (one egg is for coating)
- 2 tbsp Honey
- 1 lemon Lemon Zest
- 1 tsp Vanilla Sugar
- Salt

Instructions
- Prepare all the required ingredients.
- Sift flour and then place it in a large bowl. Add baking powder and 2 eggs. Mix everything together.
- Add softened butter, brown and vanilla sugar, honey and a dash of salt. Peel lemon zest and add it to the mix. Slightly blend together the ingredients.
- Add the almonds and start making the dough. It will take you about 5-7 min to make it the right consistency.
- Divide the dough into 2 pieces and make a nicely shaped roll out of each one. Carefully place on a baking tray, coat with some egg yolk and bake for 25 min at 350 F.
- Remove the rolls from the oven and let them cool for about 20-30 min. Cut each roll into thick biscottis. Be very careful as the biscottis are very delicate. Use bread knife and do not press down the rolls and don't be afraid to break/cut the almonds.
- Place all the biscottis back on the baking tray and bake for another 10 min.
- Remove the biscottis from the oven and let them cool down a little bit. Enjoy with a cup of tea or coffee! Bon Nuppetie!
Recipe Notes
Store biscottis in an air tight container to keep them soft.
